Mostly ignorance on power requirements nowadays. (I've been using 350W PSUs forever so I assumed doubling it would have been enough) I will upgrade if I need to. Fortunately PSUs are not the most expensive things to upgrade, and since it's modular, I can get the same brand and use the same cables.

They aren't that bad. I think ours are worse but I have to be willing to redo the cabinets first before the counters. I use the kitchen so much I have a hard time letting go to get the work done.

Not challah bread-- just good, ol' fashioned, French style lean dough. I'm glad it was all eaten, because by now any leftovers would be hard enough to carve into a shiv.
