Food 2023 Garden Thread

I've never had great homemade pickles. They all suck compared to Boars Head. I assume because we don't have access to the suite of chemicals they do.
 
tried mine last night. Theyre basically half-sours right now, which is a nice suprise, although im sure theyll get more pickley. But they retained their crunch! at least as good as grillos.

I had them in brine within 2 hours of picking, picked them small, ice bathed them, and used a bathwater warm brine, rather than boiling.

^^ kids and I ate almost a whole quart already, so made up a new one to replace it. Went a little more acidic and more garlic on this one. 3

Secret ingredient in there that I havent seen in pickles most places that adds a lot. Only 6 ingreds total: Brine, mustard seeds, garlic, cukes, dill, special sauce
